Co-owner and chef Pace Webb told her partner Chris Georgalas about the idea for Daddy’s Chicken Shack on their first date. The rest of the story is deep fried history.

Daddy’s Chicken Shack believes in simple, high-quality ingredients with a lot of love. All of our chicken is hormone-free, antibiotic-free and free range. We brine our bird overnight in buttermilk and aromatics then double-batter before frying to golden crispy perfection.

The bread we serve is made with 50% local heritage grains sourced from the Tehachapi Grain Project so you know you are getting the very highest quality wheat in your bread.

Love and fried chicken go together as well as the two people who built Daddy’s Chicken Shack. This isn’t the only startup Pace Webb and Chris Georgalas have together. The classic fried chicken sandwich has been lovingly perfected by Pace over the years. And with their first bundle of joy, daughter Asa, on the way, it was time to find a way to serve accessible, authentic, inspired creations to the chicken-loving public. Starting with a small stand at Smorgasburg, LA’s weekly food festival in downtown Los Angeles, taught the couple all they needed to know about working together through thick and thin.

Working on her catering company, Taste of Pace, has been an ongoing labor of love where she maintains massive spreads for large audiences. Operating Daddy’s Chicken Shack, by comparison, has been a country-style breath of fresh air.

The underlying theme of the cuisine at Daddy’s is American southern with a hint of Asian, which is also fitting for the couple as Pace hails from the great state of Texas and Chris is half Japanese. In the end, the duo just want to make you delicious umami bombs!
